Albany Superior Low G.I. Wholewheat Brown Bread

2 boiled eggs

60ml mayo

Watercress

Salt and pepper to taste

Chop up your boiled egg finely and stir in the mayo and 1 teaspoon of chopped watercress.

Season with salt and black pepper to taste.

Take your bread and cut off the crusts and cut into fingers about 2.5cm -3cm wide.

Spoon egg mayo mix onto a slice of bread and top with watercress.
