Made with Low GI Wholewheat Brown Bread
VIEW BREAD BENEFITS1-2 slices of Albany Low G.I. Wholewheat Brown Bread
2 eggs, poached
1 cup baby spinach or swiss chard(mfino), shredded
½ cup cherry tomatoes
15ml butter
Toast the bread.
Place the butter in a pan on a medium heat and sauteed cherry tomatoes until the skins begin to burst. Then add spinach until it wilts.
Season to taste with salt and pepper.
toast on your plate. Layer on the spinach and tomatoes and then top with poached eggs. Breakfast is served!
