

Batter for deep frying:
2 cups Golden Cloud Flour
1 tsp paprika
1 tsp chicken spice
¾ cup ginger beer
1 egg yolk
1 tsp garlic salt
½ tsp black pepper
4 Albany Superior White Buns
½ cup Cross & Blackwell Mayonnaise
2 tbsp Sriracha
4 chicken breasts
1 cup slaw mix
Gherkins, sliced
¼ cup pickle juice, form the gherkin jar
To make the batter, whisk together the dry ingredients
In a separate bowl, whisk together the ginger beer and egg yolk
To cook the chicken, heat a pot of oil
Next dip the chicken breasts in the flour mixture and then into the egg mix - repeat 3 times
Finally fry the chicken breasts until well browned, remove and leave to drain on a kitchen towel
Make the sriracha mayonnaise by stirring together the mayonnaise and sriracha
Stir the slaw in the pickle juice and allow to stand for an hour or so.
In a medium pan melt 1 tbsp butter and then toast the burger buns to golden brown
To assemble the burgers, spread both sides of each bun with mayonnaise, place the chicken breast on the bottom bun, top with pickled slaw and gherkins
Finally close up with the top bun
