2 slices Albany Superior Low G.I Wholewheat Brown Bread
1 cup baby spinach
60ml Danish feta
15ml chopped chives
5ml olive oil
½ avo, sliced and drizzled with lemon juice
Mix the Danish feta with the chopped chives.
Spread this onto the bread.
Layer on the spinach, cucumber and avocado.
Top, slice and serve!
