Albany Garlic & Herb Wraps
2 sirloin steaks, fat trimmed
2 tbsp oil
Salt
Black pepper
2 onions, sliced
3 tbsp oil for frying
½ tsp Sugar
1 tsp cumin seeds
Handful rocket
1 avo
Lemon juice
Feta
¼ cup herby mayonnaise
Rub the steaks in the oil, salt and pepper
To make the caramelised onions, fry the onions in 3 tbsp oil, over a medium heat for 10 minutes. Make sure to stir them regularly
Then sprinkle with cumin seeds, salt and half a teaspoon of sugar - stir to mix through
Cook for a further 30 minutes to 1 hour over a low heat, stirring every so often to ensure the onions don’t burn. Keep checking them
Heat a griddle pan to smoking
Fry the steaks for 1-2 minutes per side, turning only once
Allow to rest on a chopping board for 5-10 minutes before slicing thinly
Slice the avo and squeeze over some lemon juice and salt
To assemble, lay the wraps on a work surface
Looking at the wraps, divide them into 4 quarters lengthwise and spread 1 tsbp of cream cheese or a drizzle of herby mayo 10-12 cm across in the second quarter closest to you. Top the mayo or cream cheese with rocket
Top the rocket with avo slices and feta and next with the steak slices
Finally end with the caramelised onions and then close up the wrap
Toast on a sandwich press or in a nonstick pan until golden and crispy
