Tomato Gazpacho with a Twist
Albany Low Gi 700g White Bread
Made with Low GI White Bread

3 slices Albany Superior Low G.I. White Bread

1kg ripe jam tomatoes

2 garlic cloves

125ml olive oil

1sp salt

1 tbsp white wine vinegar

Olive oil and basil leaves for garnish

Pass 3 slices of bread through the thickest setting of rollers on your pasta machine. Then using your fettuccini roller, pass the bread through the rollers.

You will now have bread-a-chini which can either be deep fried or oven toasted.


For the soup

Make crosses on the bottom of each of your tomatoes. Blanch them in boiling water and then remove the skin. Place them in the blender with all the other ingredients. Blend until you have a smooth soup.

Garnish with a drizzle of olive oil, basil leaves and bread-a-chini.
