4 Albany Brown Wraps

1 tbsp Pesto

1 cup Cross & Blackwell mayonnaise

Zest of 1 lemon 

3 tbsp oil

1 tsp chicken spice 

4 chicken breasts 

Tomato, sliced

Avo

Carrots, grated 

Lettuce, shredded 

 

Serves: 4

Stir together the pesto, mayonnaise and lemon zest

Marinade the chicken breast in oil and chicken spice

Grill the chicken breasts on a hot griddle pan until cooked through

Remove from the pan and allow to rest for a few minutes before slicing into strips

Make up the wraps by spreading some pesto mayonnaise on each wrap

Top with shredded lettuce, sliced tomato, avo slices and grated carrots

Place the chicken strips on top of the salad and avo and top with more pesto mayonnaise
