Cheesy Corn Toasties
Albany Superior 700g BOB Bread
Made with Best of Both White Bread

4 slices Albany Superior Best of Both White Bread

1 x 415g KOO Creamed Corn

100g mozzarella cheese, grated

100g cheddar cheese, grated

5 spring onions, chopped

1 red or green chilli, deseeded and sliced (optional)

Salt and milled black pepper

30ml butter, softened

Place the creamed corn, mozzarella cheese, cheddar cheese, spring onions and 1 chilli (optional) into a mixing bowl. Season with salt and pepper and mix well.

Butter the 4 slices of bread on one side. Place 2 slices of bread, butter-side facing down onto a chopping board.

Spoon some of the creamed corn mixture onto the sandwich bases.

Top with the remaining bread, butter side up, and fry in a pan over a medium heat for 3-4 minutes per side, or until the sandwiches are golden and toasted and the cheese has melted. Alternatively cook the sandwiches in a toasted sandwich maker.



If the mixture is too runny, drain some of the mixture in a colander and return to the creamed mixture.
