1 slice Albany Superior Low G.I. White Bread

45ml cream cheese

1 avocado

Lemon juice

Salt & pepper to taste

45ml balsamic reduction

5 strawberries, hulled and quartered

30ml shaved coconut

Mash together the lemon juice, avo, salt and pepper.

Toast the bread.

Spread with cream cheese and then top off with the avo.

Top with strawberries.

Drizzle with balsamic reduction.

Garnish with shaved coconut.
