4 slices Albany Best of Both Genius Bread
2 Tbs Crosse & Blackwell Mayonnaise
1 handful butter lettuce leaves
1 tin of tuna in brine – drained
5 cherry tomatoes – halved
1 small carrot
2 baby cucumbers
¼ broccoli, broken into tiny florets
Salt & pepper to taste
Using a sharp peeler, shave your carrot and cucumbers into thin ribbons.
Spread 2 slices of bread with a tablespoon of mayonnaise each, then add a layer of lettuce leaves followed by tuna, carrot, cucumber, cherry tomatoes and broccoli.
Close the sandwiches with another slice of bread and you’re ready to go.
