Made with Ultima Kilojoule Controlled Brown Bread

2 Slices of Albany Ultima Kilojoule Brown
1 tin of mackerel fillets
Thinly sliced red onion
1 tomato, thinly sliced
Butter or margarine (optional)

Parsley sauce:
30ml chopped parsley
15ml capers
30ml mayonnaise
15ml olive oil

Salt and pepper
Squeeze of lemon juice

Butter the slices of Albany bread (optional)

Top with sliced tomato then the mackerel fillets

Then the red onion.

For the Parsley sauce:

Chop the capers and mix together the parsley, mayonnaise and olive oil. 

Drizzle over the mackerel fillets season with salt and pepper and a squeeze of lemon juice.
