4 slices of Albany Superior Best of Both White Bread
1 small carrot
Half an avocado
Peel and boil the beetroot until soft.
Puree the beetroot and season.
Blend 1 small carrot with 15ml of mayo.
Mash half an avocado with a squeeze of lemon juice. Season for taste.
Spread first slice of bread with beetroot puree and then top with second slice.
Spread carrot and mayo mix onto this and top with third slice.
Top this with mashed avocado and final slice of bread.
Slice carefully on the diagonal and serve standing up next to each other, or cut again to make triangles.
