Made with Low GI Wholewheat Brown Bread

2 slices of Albany Superior Low G.I. Wholewheat Brown Bread

1 portion of salmon, cooked to your liking

30ml mayonnaise

Fresh micro greens

30ml cucumber pickle

Lemon wedges

Salt and pepper

With a fork, flake up the salmon portion and stir in the mayonnaise. Season to taste.

Place your bread on a plate and top with micro greens.

Next add the salmon mayonnaise mixture and top with cucumber pickle and a squeeze of lemon.

Finish off with the second slice of bread and serve.
