2 slices Albany Low G.I. Wholewheat Brown Bread

45-60ml cream cheese

1tsp capers, chopped

80g smoked salmon or salmon trout

Herbs for garnish

Lemon wedges

Salt and pepper to taste

Toast the bread and spread with cream cheese.

Arrange the salmon on the slices of toast and top with capers.

Squeeze over some lemon juice and season with salt and pepper to taste.
