2 slices Albany Superior Low G.I. Wholewheat Brown Bread

Butter for spreading

1 tin tuna

30-45ml mayonnaise

¼ cup diced cucumber

¼ cup diced tomato

Medium boiled egg, peeled and sliced

15ml diced onion

Salt and pepper to taste

Squeeze of lemon juice

Lettuce leaves

Mix the drained tuna, cucumber, tomato and onion together.

Add in the mayonnaise and a squeeze of lemon juice. Mix thoroughly.

Season with salt and pepper to taste.

Butter the bread.

Lay the lettuce leaves evenly on one slice.

Layer the tuna mixture on top of the lettuce and close the sandwich with the other slice of bread. Slice and serve.
