Albany Low GI Seeded Brown Bread / Superior Brown

250g streaky bacon

Oil for frying

4 chicken breasts

50g shaved ham 

4 tbsp butter

Lettuce

2 tomatoes

8 cheddar cheese slices 

Cross & Blackwell mayonnaise

Fry the bacon in a non-stick pan until well browned but not crispy

In the same pan grill the chicken breast until cooked through and golden brown

Clean out the pan and then butter 16 slices of Albany bread on both sides

Over a medium heat, toast both sides of each slice of bread until golden

To assemble, lay 4 slices of bread on a board, spread mayonnaise on each slice and then top one slice with lettuce, then with chicken breast, sliced cheese and shaved ham

On the next slice put some more mayonnaise, lettuce, tomato, bacon and top with more mayonnaise

On the 4th slice spread mayonnaise and then top one slice with lettuce, then with chicken breast, sliced cheese, shaved ham and finally slices of tomato and more mayonnaise

Stack your sandwich placing the chicken, cheese and ham at the bottom then top with the bacon layer and finally another chicken, cheese and ham layer

Repeat the recipe to serve four people
