Crispy Fish Sandwiches
Albany Superior 700g BOB Bread
Made with Best of Both White Bread

Thousand Island Sauce

15ml tomato sauce

45ml mayonnaise

2-5ml chilli sauce or Tabasco (optional)

1 small gherkin, finely diced

1 slice of onion, finely diced

Crispy Fish sandwiches

8 fish fingers

4 slices Albany Superior Best of Both White bread

Butter or margarine for spreading (optional)

½ cup lettuce, shredded

1 tomato, diced

Thousand Island Sauce:

Combine the tomato sauce, mayonnaise and chilli sauce (if using), in a small bowl.

Stir in the gherkin and onion. Season with salt and pepper if desired.


Crispy Fish Sandwiches:

Cook the fish fingers according to packaging instructions and keep warm in a low heat oven.

Lightly butter the slices of bread if desired. Spread a little of the Thousand Island Sauce between the sandwich bases.

Top with four warm fish fingers per sandwich, shredded lettuce and some diced tomato.

Close the sandwich with the top slice of bread and serve at once.
