Made with Ultima Kilojoule Controlled Brown Bread

2 slices Albany Ultima Kilojoule Controlled* Brown Bread

Low fat spread (optional)

30ml pickled beetroot


15ml coriander pesto

3-4 slices shaved chicken or turkey

Salt & pepper

For the Oven-Dried Tomatoes:

1 tomato, cut into wedges

Olive oil

Thyme or rosemary sprig

Salt & pepper

For the oven-dried tomatoes, drizzle the tomato wedges with olive oil. Season with salt and pepper and place in a 100ºC oven for 1 hour until they resemble sundried tomatoes.

Spread both slices of bread with low fat spread and then with coriander pesto.

Top off with sliced turkey, oven dried tomatoes, feta and beetroot.

Close with the second slice of bread and enjoy!
