4 slices Albany Best of Both Genius Bread

8 slices mozzarella cheese

80ml tomato puree

20 little slices of salami

10 button mushrooms – thinly sliced

A few springs of parsley or basil – finely chopped

Salt & pepper to taste

Preheat the oven to 200°C.

Lay out the slices of bread on a baking tray and top each slice with about a tablespoon of tomato puree, spreading it over the top like you would a pizza.

Next, add 2 slices of mozzarella cheese onto each slice of bread.

Finish with slices of mushroom and salami, and season to taste with salt and pepper before placing the bread in the oven.

Bake for around 5 minutes or until the cheese has melted, bubbled and browned a little.

Serve the pizza sandwiches immediately with a small sprinkling of parsley.

Feel free to use your imagination when it comes to toppings and play around with what your little one likes best.
