4 Albany Superior Best of Both White Rolls, split lengthways

45ml red wine vinegar

3ml fresh ginger, finely grated

10ml sugar

1 red onion, peeled and thinly sliced

4 hot dogs sausages

Tomato sauce, to serve

d mustard, to serve

2 gherkins, sliced

1 tomato, deseeded and diced

A few baby rocket leaves or coriander leaves

 

Optional extras:

Peppadews, sliced

Cheese, grated

Crispy bacon bits

Smoked paprika mayonnaise

Place the vinegar, ginger and sugar into a small non-metallic bowl and stir until the sugar dissolves. Add the onion rings and toss to combine. Allow to stand for at least 20 minutes before draining and using.

Cook the hot dogs according to package instructions. Place a hot dog in each roll and top with some tomato sauce and mustard, according to your liking.

Top with a few gherkin slices, some of the reserved pickled onion rings, tomato and herb leaves.

Add any or many of the optional extras, if desired and serve at once.
