Blueberry Cheesecake Open Toastie

Cheesecake Mixture:

45ml smooth cream cheese

10ml icing sugar, sifted

5ml lemon juice

5ml lemon zest, finely grated


Blueberry Cheesecake Open Sandwiches:

2 slices Albany Ultima Multigrain Brown Bread

20g flaked almonds

30ml blueberry or mixed berry jam

75g fresh blueberries

1 ginger biscuit, crushed (optional)

Cheesecake Mixture

Place the cream cheese into a mixing bowl with the icing sugar and beat until smooth.

Add the lemon juice and lemon zest and mix again.


Blueberry Cheesecake Open Sandwiches

Toast the almonds in a dry frying pan, for 1-2 minutes, until the almonds are golden. Set aside to cool.

Lightly toast the bread.

Spread a thin layer of jam onto the toasts, followed by the cheesecake mixture.

Top with the fresh blueberries, toasted almonds and a little crushed ginger biscuit, if desired.

Serve at once.
