Albany Tasty Protein

2 slices Albany Ultima Rooibos and rye
Butter or margarine (optional)
2 cups spinach, wilted
2 soft poached eggs
45-60ml tomato-onion salsa
1/2 tin butter beans, mashed
Olive oil
Salt and pepper
Lemon juice

Toast both slices of bread and butter (optional)

Mix together the butter beans, olive oil, lemon juice and salt and pepper

Spread the toast with the butter beans, wilted spinach and poached eggs

Garnish with salsa, salt and pepper
