1 slice Albany Ultima Rooibos & Rye Brown Bread
15ml low fat mayonnaise (optional)
1 roast chicken breast
½ avocado, sliced
Thinly sliced red onion
For the roasted cherry tomatoes:
60ml cherry tomatoes
10ml olive oil
Sprig of thyme
Salt & pepper
Preheat oven to 180ºC.
First make the roasted tomatoes, by placing them on a roasting tray. Drizzle with olive oil, season and place the sprig of thyme in the centre.
Roast until skins are blistered and tomatoes are soft.
If desired, spread the mayonnaise over the bread. Layerthe lettuce leaves, sliced avo, red onion and roasted tomatoes. Season with salt and pepper.
Top off with sliced roasted chicken breast and enjoy!
