Made with Albany Ultima Rooibos & Rye Brown Bread


  1. Preheat oven to 180ºC.
  2. First make the roasted tomatoes, by placing them on a roasting tray. Drizzle with olive oil, season and place the sprig of thyme in the centre.
  3. Roast until skins are blistered and tomatoes are soft.
  4. If desired, spread the mayonnaise over the bread. Layer the lettuce leaves, sliced avo, red onion and roasted tomatoes. Season with salt and pepper.
  5. Top off with sliced roasted chicken breast and enjoy!
