Super Duper Salad Sarm
Made with Albany Ultima Rooibos & Rye Brown Bread
- Preheat oven to 180ºC.
- First make the roasted tomatoes, by placing them on a roasting tray. Drizzle with olive oil, season and place the sprig of thyme in the centre.
- Roast until skins are blistered and tomatoes are soft.
- If desired, spread the mayonnaise over the bread. Layer the lettuce leaves, sliced avo, red onion and roasted tomatoes. Season with salt and pepper.
- Top off with sliced roasted chicken breast and enjoy!
