Cheesy Corn Toasties
Made with Albany Superior Best of Both White Bread
- Place the creamed corn, mozzarella cheese, cheddar cheese, spring onions and 1 chilli (optional) into a mixing bowl. Season with salt and pepper and mix well.
- Butter the 4 slices of bread on one side. Place 2 slices of bread, butter-side facing down onto a chopping board.
- Spoon some of the creamed corn mixture onto the sandwich bases.
- Top with the remaining bread, butter side up, and fry in a pan over a medium heat for 3-4 minutes per side, or until the sandwiches are golden and toasted and the cheese has melted. Alternatively cook the sandwiches in a toasted sandwich maker.
Note: If the mixture is too runny, drain some of the mixture in a colander and return to the creamed mixture.
